Aunty Audrey's Big Island Eats

aunty-audreys-big-island-eatslargeFavorite Island Recipes from Chefs, Restaurants, and Community Members

by Audrey Wilson

The Big Island is unique, especially when it comes to food: We take it very seriously.

The Island’s varying landscape offers the opportunity to provide a wide array of produce. Eleven of the thirteen ecosystems here enable us to grow a diversity of crops; coffee, cacao, macadamia nuts, watercress, avocado, corn, purple sweet potato, taro, tea, tomatoes, cucumbers, bamboo shoots, and mangoes—just to mention a few. Our food businesses include breweries, goat farms, bakeries (including mochi), tofu factories, a fish cake factory, candy pro cessing, a large aquaculture industry, and a ranching industry.

So when we talk Big Island food, we are covering a wide gamut of edibles and, not surprisingly, when we gather with family and friends, it always involves food. The abundance of good food is often a reason for people who decide to settle on the Big Island. Former Big Islanders, returning home from visiting family or friends, can always be spotted at airports with their purple Big Island Candies carryout boxes containing omiyage. Additionally, where else can you visit KTA Super Stores and get hundreds of local products under the Mountain Apple brand?

Aunty Audrey’s Big Island Eats shares with you the Island’s recipes and culinary fare gathered from friends, family, chefs, restaurants, and home economists. It is a community collection of food that conjures up nostalgic memories of dishes and restaurants now gone but not forgotten; that pays homage to the Island’s farmers, ranchers, businessmen and women, and community leaders; that invites you into aunty’s home for a family-favorite meal; that reveals signature recipes from some of the Island’s best-known chefs. With over 135 recipes, Aunty Audrey’s Big Island Eats is sure to become a valued resource and keepsake of what the Big Island has to offer.

Enjoy!
